Delicious Collagen Pancake Day Recipes

Pancake Day is arguably one of the best days of the year! It’s a great excuse to eat a huge stack of pancakes, but it’s also a great opportunity to get creative and try new pancake recipes. This Shrove Tuesday, try something new and incorporate a scoop of one of our delicious LQ Collagen Powders into your batter. Here are just a few delicious collagen pancake recipes to get you started.

1. Chocolate and Banana Collagen Crepes

Chocolate and Banana Collagen Pancakes

Crepes are a classic pancake recipe, but it’s time to change up your traditional crepe with a scoop of our Collagen Powder in Chocolate. 

Ingredients: 

  • 360 ml preferred milk choice  
  • 125 g flour  
  • 1 Scoop of LQ Collagen Powder in Chocolate  
  • 2 tbsp. caster sugar  
  • Pinch of salt  
  • 1 tsp. vanilla extract 
  • 3 eggs  
  • 60 g butter, melted  
  • 2 bananas  
  • 85 g melted chocolate 

Method:  

  • Add the milk, flour, collagen powder, sugar, salt, vanilla extract and melted butter into a blender. Blend until you get a smooth and foamy consistency. 
  • Pour a quarter of your batter into a non-stick pan over a medium heat and swirl the batter around the whole pan, spreading the mixture so that you get a bigger pancake.  
  • Cook for 2-3 minutes or until you get a nice golden bottom, and flip.  
  • Continue to cook for a further minute, then remove it off the heat.  
  • Place on a plate and fold the crepe into quarters.  
  • Top with the melted chocolate and banana slices. 

2. Peanut Butter Stack Collagen Pancakes

Peanut butter collagen pancakes served with mixed berries and a drizzle of maple syrup are the perfect treat for those with a sweet tooth. Featuring a scoop of our delicious Vanilla Collagen Powder, you can enjoy the benefits of collagen with the addition of  collagen peptides.  

This recipe doesn’t have to be saved for Pancake Day, this is one of our favourite recipes to make at the weekend, as a breakfast treat.  

Ingredients:  

  • 50g flour  
  • 1 scoop LQ Collagen Powder in Vanilla  
  • 1/2tsp baking powder 
  • Pinch of salt  
  • 1 egg  
  • Mashed banana  
  • 3 tbsp peanut butter  
  • 100ml preferred milk  
  • 1tsp coconut oil 
  • 10g mixed berries (for topping)  
  • 1tbsp maple syrup (for topping) 

Method:  

  • Mix all of your dry ingredients together.  
  • Once thoroughly mixed, add in the wet ingredients and continue to mix until you get a smooth consistency.  
  • Add your coconut oil into a non-stick pan on a medium heat.  
  • Take a ¼ of your pancake batter and pour into the pan. Fry the pancake for 2-3 minutes.  
  • While that’s frying lightly, add one tsp of the peanut butter to the top of the pancake. 
  • Then add more pancake batter on top of the peanut butter to seal it in place.  
  • Flip your pancake and fry for another 2-3 minutes.  
  • Repeat until all your mixture is used up.  
  • Serve stacked onto a plate with fresh berries and a drizzle of maple syrup. 

3. Savoury Collagen Pancakes

Savoury Collagen Pancakes

Pancakes don’t have to be sweet, if you’re looking for something savoury instead – we’ve got just the pancake recipe for you.  

Packed with essential nutrients and a scoop of our Unflavoured Collagen Powder, this spinach and tuna pancake makes for the perfect lunchtime meal.  

Ingredients:  

  • 2 tsp olive oil  
  • 2 chopped garlic cloves  
  • 250g spinach  
  • 1 tbsp tomato puree 
  • 1 can of tuna 
  • 150g cottage cheese 
  • 1 scoop of LQ Collagen Unflavoured Collagen Powder  
  • 2 eggs  
  • 25g plain flour 

Method: 

  • Place a medium-sized non-stick pan on a medium heat.  
  • Add 1tsp oil, garlic and spinach to the pan and stir until your spinach begins to wilt.  
  • Then add your tomato puree, tuna and cottage cheese to the pan and fry for about 2 minutes and add to a bowl. 
  • In a separate bowl, beat the eggs with the flour, collagen powder and 2tbsp of water.  
  • Using the remaining oil, add the batter into your pan a cook, swirl it around the pan to thin out the consistency and fry for 2-3 minutes
  • Flip the pancake around and continue to cook the other side for 1 minute. 
  • Once you’ve cooked all your pancakes, spoon the filling into the middle of each of your pancakes, roll it up and enjoy!
